Quiche with caramelized red onions

Quiche is a traditional French dish made with eggs, cream or milk (for a light version) and baked in a buttered blanc.

Ingredients

About the dough

  • 250 g flour
  • 100 g cold butter, in 1 cm cubes. 
  • 1 egg
  • 1 tsp oregano
  • 1 tsp salt
  • 2-3 tbsp cold water

For the filling:

  • 400 g red onions
  • 2 tbsp butter
  • 100 g Brie cheese
  • 100 g cheese or Gruyere cheese
  • 200 ml. cooking cream or fresh milk
  • 100 ml. white wine
  • 3 eggs
  • 4 sprigs fresh thyme
  • 2 garlic cloves
  • ½ tsp salt
  • ½ tsp black pepper

Method of preparation

Preparation of the dough

Mix the flour with the salt. Add the butter and rub with your hands until crumbs form. Stir in the oregano, egg and cold water. Knead until you get a ball of dough. Wrap in cling film and refrigerate for 30 minutes. You can put all the ingredients for the dough except the water in the food processor fitted with the kneading blade. Turn for 2 minutes and add the water in a thin stream. Let the processor run until a ball of dough forms.

Baking the dough

Remove the dough from the fridge and roll it out on a lightly floured surface. Place it in a quiche tin with a removable bottom with a diameter of 23 cm. Prick the bottom of the dough with a fork. Cover the top with a sheet of baking paper and top with 1 kg of ripe beans or sea salt to prevent the dough from rising while baking. 

Put the dough in a preheated oven to 190 °C for 15 minutes. Remove the baking tray and remove the baking paper and the beans. Set aside and prepare the filling.

Cut the onion into half-moons and into thin slices. Chop the garlic. Put them in a pan with 2 tablespoons of butter and sauté over low heat until the onions caramelize. Pour in the wine and add the thyme leaves. Cook until the liquid has evaporated. Remove the pan from the heat and let the onions cool.

Beat the eggs, add the cream, grated cheese, salt and pepper. Finally, add the cooled onions.

 

Final touches

Pour the filling over the half-baked blt. Arrange the thinly sliced Brie cheese on top. Place the baking tray in the oven at 200 °C and bake for 30 minutes.
